Makes one cast-iron full. Serves 2?

Ingredients

  • 3 large potatoes
  • 3 tsp paprika
  • 2 slices bacon (or tofu?)
  • 2/3 cup Kimchi (with juices)
  • 1 small onion
  • 2 tsp sugar
  • 110g shredded cheese
  • 1 scallion, chopped to top

Steps

  1. Preheat to 450. Also cut ~1-2lb in potatoes into 1cm - square - ends 'sticks'. More potato = thicker 'poutine'.

  2. Throw into a cast iron. Lightly coat with vegetable oil, toss to combine.

  3. Mix in 2t paprika, then season to taste with salt and pepper.

  4. 450F for 15 minutes x3, scraping any stickage off and adding oil each time as needed.

  5. While it's baking, crisp up a strip of bacon or two. Keep warm in toaster oven (?) for 10 minutes at 225F or so, to continue crisping / dehydrating.

  6. Mandoline a small onion on the thinnest setting, add oil, sprinkle some sugar, and cook down in a saucepan.

  7. When onion is softened and slightly browned, add the 1/2 cup of chopped kimchi. Add 1T of gochujang (more or less, depending on taste). Add whatever else, really. I did some canned corn, and leftover unagi eel.

  8. Cook until completely softened.

  9. After the potatoes have been in for 45 minutes in total, add a layer of cheese on top, preferably easily meltable. Then add the cooked kimchi. Add another layer of cheese on the very top.

  10. Broil 1-2 minutes on 'high' until cheese is melted, and barely bubbling. Throw on crisped bacon and some chopped scallion. Serve.
