Makes 20.

Pair with Buttercream, Swiss Meringue

Ingredients

Dry

  • 282g flour
  • 12g = 3 tsp baking powder
  • 5g = 0.75 tsp salt

Wet

  • 170g = 3/4 cup butter
  • 300g = 1.5 cup sugar
  • 1.5 Tbsp = 1-2 lemons' zest
  • 150g = 3 eggs
  • 10g = 2.25 tsp vanilla extract
  • 180g = 3/4 cup milk
  • 90g = 3/8 cup lemon juice
  • 210g = 1.5 cup fresh or frozen blueberries, tossed in 1 Tbsp flour

Special Equipment

Muffin tin + cupcake liners

Steps

  1. Preheat to 350F
  2. Mix flour, baking powder, salt.
  3. Cream butter, sugar, and lemon zest.
  4. Add eggs and vanilla extract.
  5. Add dry ingredients. Mix just enough.
  6. On low speed: Add milk. Add lemon juice. Mix until just combined.
  7. Add blueberries, mix until just combined. DO NOT OVERMIX.
  8. Fill cupcake liners to approx 80% -- should be approx 80g of batter each.
  9. Bake at 350F for 20 (18-21) minutes.
  10. Cool on wire rack, and frost.
