Makes 20.
Pair with Buttercream, Swiss Meringue
Ingredients
Dry
- 282g flour
- 12g = 3 tsp baking powder
- 5g = 0.75 tsp salt
Wet
- 170g = 3/4 cup butter
- 300g = 1.5 cup sugar
- 1.5 Tbsp = 1-2 lemons' zest
- 150g = 3 eggs
- 10g = 2.25 tsp vanilla extract
- 180g = 3/4 cup milk
- 90g = 3/8 cup lemon juice
- 210g = 1.5 cup fresh or frozen blueberries, tossed in 1 Tbsp flour

Muffin tin + cupcake liners
Steps
- Preheat to 350F
- Mix flour, baking powder, salt.
- Cream butter, sugar, and lemon zest.
- Add eggs and vanilla extract.
- Add dry ingredients. Mix just enough.
- On low speed: Add milk. Add lemon juice. Mix until just combined.
- Add blueberries, mix until just combined. DO NOT OVERMIX.
- Fill cupcake liners to approx 80% -- should be approx 80g of batter each.
- Bake at 350F for 20 (18-21) minutes.
- Cool on wire rack, and frost.
