Makes 4x 150-170g cod filets
Ingredients
- 4x 150-170g black cod (sablefish) filets
- 70g = 1/4 cup miso (red or white, doesn't matter)
- 60g = 1/4 cup sake
- 30g = 2 Tbsp mirin
- 30g = 2 Tbsp soy sauce
- 14g = 1 Tbsp vegetable oil
- 50g = 1/4 cup sugar
Steps
- Combine ingredients to make marinade.
- Marinate, defrosted in refrigerator, for 0.5-48 hours
- Put on cast iron or other broiler-safe vessel
- Preheat broiler; cook for 10-11 minutes until top surface is "well charred" on top
