Makes 4x 150-170g cod filets

Ingredients

  • 4x 150-170g black cod (sablefish) filets
  • 70g = 1/4 cup miso (red or white, doesn't matter)
  • 60g = 1/4 cup sake
  • 30g = 2 Tbsp mirin
  • 30g = 2 Tbsp soy sauce
  • 14g = 1 Tbsp vegetable oil
  • 50g = 1/4 cup sugar

Steps

  1. Combine ingredients to make marinade.
  2. Marinate, defrosted in refrigerator, for 0.5-48 hours
  3. Put on cast iron or other broiler-safe vessel
  4. Preheat broiler; cook for 10-11 minutes until top surface is "well charred" on top
