Makes as much as you want.
Ingredients
- Chicken wings
- Baking powder
- Salt
Steps
- For every pound of defrosted chicken, use 5g salt and 5-8g baking powder.
- Mix, toss to completely cover (use a lid if you need to!)
- Spread out on a baking rack set in a foil lined baking sheet
- Refrigerate uncovered for 8-24 hours
- Preheat oven to 450 (convection preferred)
- Pour a little water (enough to cover the bottom) to catch any dripping oil
- Bake for 20 minutes
- Flip, bake for another 15-25 (turn down oven a bit if smoking, but don't be tempted to add more water)
- Serve with dipping sauce (mandatory -- recommendations include sriracha mayo, Frank's red hot, and plum sauce)
