Makes as much as you want.

Ingredients

  • Chicken wings
  • Baking powder
  • Salt

Steps

  1. For every pound of defrosted chicken, use 5g salt and 5-8g baking powder.
  2. Mix, toss to completely cover (use a lid if you need to!)
  3. Spread out on a baking rack set in a foil lined baking sheet
  4. Refrigerate uncovered for 8-24 hours
  5. Preheat oven to 450 (convection preferred)
  6. Pour a little water (enough to cover the bottom) to catch any dripping oil
  7. Bake for 20 minutes
  8. Flip, bake for another 15-25 (turn down oven a bit if smoking, but don't be tempted to add more water)
  9. Serve with dipping sauce (mandatory -- recommendations include sriracha mayo, Frank's red hot, and plum sauce)
