Serves 4.

Ingredients

  • 2 medium potatoes, cut into 2" long sticks
  • 1 medium cauli, cut into florets
  • 5 Tbsp EVOO
  • 1 tsp cumin seeds
  • 1/2 tsp tumeric powder
  • 1 onion, small, chopped
  • 1 Tbsp ginger, thinly sliced
  • Pinch of asafetida
  • Pinch of chili powder
  • 1 tsp salt
  • 1 Tbsp lime juice
  • 1/2 cup chopped cilantro leaves (incl stems) for garnish

Steps

  1. Preheat oven to 400F.
  2. Toss potatoes and cauli with 3 Tbsp EVOO. Spread into an even layer on a baking dish or cast iron.
  3. Roast for 15 minutes, toss, and 15 more (total 30 minutes). They should be browned and slightly crispy
  4. Meanwhile heat 2 Tbsp EVOO on another cast iron on the stovetop.
  5. Add cumin and cook, until fragrant and turning brown, 1 minute.
  6. Add tumeric and swirl.
  7. Add onion, and cook until translucent, 4-6 minutes.
  8. Add ginger, asafetida, chili powder.
  9. Stir into potatoes / cauli, mix any charred bits in. Don't overmix, lest they break apart.
  10. Add salt and lime juice, to taste. Cook until potatoes + cauli are tender, 5-6 minutes.
  11. Top with cilantro.
