Serves 4.
Ingredients
- 2 medium potatoes, cut into 2" long sticks
- 1 medium cauli, cut into florets
- 5 Tbsp EVOO
- 1 tsp cumin seeds
- 1/2 tsp tumeric powder
- 1 onion, small, chopped
- 1 Tbsp ginger, thinly sliced
- Pinch of asafetida
- Pinch of chili powder
- 1 tsp salt
- 1 Tbsp lime juice
- 1/2 cup chopped cilantro leaves (incl stems) for garnish
Steps
- Preheat oven to 400F.
- Toss potatoes and cauli with 3 Tbsp EVOO. Spread into an even layer on a baking dish or cast iron.
- Roast for 15 minutes, toss, and 15 more (total 30 minutes). They should be browned and slightly crispy
- Meanwhile heat 2 Tbsp EVOO on another cast iron on the stovetop.
- Add cumin and cook, until fragrant and turning brown, 1 minute.
- Add tumeric and swirl.
- Add onion, and cook until translucent, 4-6 minutes.
- Add ginger, asafetida, chili powder.
- Stir into potatoes / cauli, mix any charred bits in. Don't overmix, lest they break apart.
- Add salt and lime juice, to taste. Cook until potatoes + cauli are tender, 5-6 minutes.
- Top with cilantro.
