Makes 2 loaves, or feed one person for two breakfast's.

Ingredients

For the paste:

  • 150 g (8 oz.) dried "red" adzuki beans
  • 75 g (3/4 c) sugar
  • 40 g (8 T) butter --- but consider using less

For dough:

One "Bread, Milk (The Useful One)" recipe

Steps

Red bean paste:

  1. Wash and rinse the red beans.
  2. Cook them on "high" in a slow cooker for 2-3 hours. Alternatively, use the lowest power setting on the stove. Cook until softened.
  3. When the beans are done, drain and let rest.

At this point, you should be making the dough (see below).

  1. Bean paste recipe continues. Throw beans, butter, and sugar into blender, then blend until smooth.
  2. If it's not "paste-y" enough, heat the remaining mixture over low heat, stirring.
  3. Let cool when done.

Make the dough:

  1. Mix the cream, egg, sugar, flour, yeast, and salt. Knead. Extra flour may be needed, but the dough should be nice and supple, not sticky.
  2. Proof for 1 hour, to 1.5x size.

Assembly:

  1. Grease two loaf pans, and line with parchment.
  2. On a lightly floured surface, roll out dough into large sheet, and laminate red bean paste in between. Cut into three strips, braid, and place inside loaf pans.
  3. Proof another hour. Preheat 350F.
  4. Egg wash, then bake 30-40 minutes (non-convection)
  5. Let cool, cut!
