Makes one loaf, or 4 burger buns

Ingredients

  • 75g water
  • 105g milk
  • 4g yeast
  • 265g flour (optionally: substitute 80g of total with whole wheat flour)
  • 5g salt
  • 7g sugar
  • 12g butter, softened or cubed (optionally add up to 25g for extra buttery-ness); Optionally, substitute 1:1 with EVOO (12g)

Steps

  1. Combine milk, water and yeast, cover and set aside for 10 minutes.

  2. In a mixing bowl, combine flour, sugar and salt, and butter.

  3. Total mixing time is around 15 minutes, or 5 minutes at speed #2 on the stand mixer.

  4. Pull the dough out of the mixer, shape it into a tight ball, grease a bowl, drop the dough in, cover it and let it rise for 1-1.5 hours / doubled in size.

  5. Prepare 8 x 4 inch loaf pan (with parchment) and put the dough in. (Or don't... make it into whatever shape you need it for... eg. burger buns are 100g each)

  6. Roll it into a spiral-cross-section tube, drop it in the loaf pan, cover it with a damp towel and let it rise for another 45 minutes to 1.5 hours.

  7. Optionally, egg-wash for better browning.

  8. Stick it in a convection-oven pre-heated to 350F for 30-35 minutes or until light golden brown. Alternatively, use 375F non-convection.

  9. Cool on rack.
