The following is left for informative purposes only. As of Game Update 1.1.52 Steam Workshop should automatically handle UMM and OTM mod installation after subscribing/unsubscribing.
Pick one (and only one) of the following installation methods.
Pick 2a for 99% of cases
Pick 2b for issues with the mods not being installed correctly
Pick Modfinder step if you are completely unable to get any of the other steps to work
Launch your game! As of 2023-04-04, the game should support auto installation of workshop mods!
Manually installing the mod

Step 1:
Open your game installation
Step 2:
Navigate to the folder that contains the downloaded mod (Green arrows mean double click, purple arrows are showing the next folder)
Step 3:
Double click the downloaded zip file to open it (I'm using 7zip in this screenshot)
Step 4:
Navigate to your %UserProfile%\AppData\LocalLow\Owlcat Games\Warhammer 40000 Rogue Trader\UnityModManager\ folder (copy this folder path)
(~/Library/Application Support/Owlcat Games/Warhammer 40K Rogue Trader for Mac)
If there is no UnityModManager folder, click this to see the instructions for fixing that
Step 5:
Create a new folder here, called 0ToyBox0
Step 6:
Drag the files from the opened zip (from step 2) into the new 0Toybox0 folder
Step 7:
Boot up the game, and Toybox should be installed! Open the UMM (and thus Toybox menu) with Ctrl + F10 Note, you will need to do this every time you want to update Toybox
Open UnityModManager ingame by pressing CTRL+F10 (not Shift+F10, that's another Mod Manager). You should now see ToyBox. You can access its functionality by pressing the button with the three sliders on top of each other (right next to the www button).
Modfinder is a community made tool to install mods for Wotr and now RT. It is not a Workshop mod installer, but I am now including it in this guide people many many many many people can't follow this guide correctly. To download and use Modfinder, follow this link and download this tool. Run the Modfinder.exe, and install Toybox by clicking the Install button next to Toybox's entry

You can manually install the UMM folder with these steps
Step 1:
Open your game installation
Step 2:
Navigate to Steam\steamapps\common\Warhammer 40,000 Rogue Trader\WH40KRT_Data\StreamingAssets\
Step 3:
Open OwlcatUnityModManager.zip
Step 4:
Navigate to your %UserProfile%\AppData\LocalLow\Owlcat Games\Warhammer 40000 Rogue Trader\ folder (copy this folder path)
Step 5:
Drag the files from the opened OwlcatUnityModManager.zip and drag the contents into the folder
Step 6: Continue on with the other instructions
