Unlike other piglins, the piglin monk is completely passive. They will seek out insane players in the nether to sell goods. The piglin monk will always spawn with a pet hoglin attached. His name is Sir Loin.
The piglin monk will accept spectre drops and barter sunstone for it. The rarer the spectre drop, the higher the chance is to receive sunstone.
Here is a list of barter chances:

Sunstone has use in rituals, but you can also give sunstone back to the piglin monk for additional trades.
This includes cooked porkchop, spectral arrows, gold ingots, crying obsidian, gilded blackstone, enchanted golden tools, regular golden apples and more.
