Global Overrides - aa2g/AA2Unlimited GitHub Wiki
Global Overrides act similar to Mesh Overrides in that they seek out texture files that are part of xx files already and replace them by filename. Unlike true Mesh Overrides, these are local to your install only, and are not included in any modcards you create.
To use Global Overrides, simply create a folder as shown above in your override folder and populate it with texture files, which will be your new defaults. All local override files must use the default file names, same as the files you're intending to replace. As of AAU 0.6.4, the folder is named "Global".
