Rayman's full moveset, not previously documented in its entirety:

Idle Analog △/▽/◁/▷ Move Rayman forwards/backwards/left/right (relative to the camera) along the ground he's standing on, if possible
Idle A Jump
Idle B Fire (strength depends on progress and whether or not you have gold fists) - lets you do a lot of things, such as (in order of appearance): break weak/damaged doors/walls/other, smash cages, hit enemies and other hazards, throw switches and press buttons, grab purple lums and friends' scarves, irritate crabs, loosen icicles/stalactites, banish wall-dwelling claws and thorny roots to the hell from whence they spawned, smash green crystals, freeze hovering skull platforms, do nothing to Globox when his snail-like pace enrages you and you shoot him, scare away piranhas, knock plums off their trees and bounce them off walls, spin cogs to power machinery, break mind control implants, and rid the world of evil.
Idle B (hold) Charge shot (if unlocked)
Idle C-△ (hold) Move camera into the back of Rayman's head, allowing you to see through his eyes somehow
Idle C-▽ Move camera behind / in line with Rayman, if possible
Idle C-◁/▷ (hold) Rotate camera CW/CCW around Rayman (from above), if possible
Idle L (hold) Concentrate until lore screen opens
Idle R Toggle HUD
Idle Start Pause
Idle Z Move camera behind Rayman, if possible, locking onto closest target, if applicable
Airborne A Toggle helicopter for slowfall (flight in SoRaL-B), auto-disengages upon landing
In menu Start Unpause (if paused)
Dialog open A Progress past dialogues marked with blue arrows (the important parts)
Ledge-grabbing A Leap up over the ledge
Ledge-grabbing Analog △/▽/◁/▷ Let go and fall (where analog stick direction is away from the ledge, relative to the camera)
In HoD Analog △/▽/◁/▷ Move the glowing indicator along the lines connecting levels
In HoD A Enter currently selected level
In HoD Start Return to Main Menu+
Carrying barrel/other A Toss barrel/other up briefly, allowing you to shoot
Carrying barrel/other B Throw barrel/other forward
Marsh-skiing A Jump (without letting go)
Marsh-skiing Z (hold) Lean backward towards the surface, lowering drag to go faster
Riding shell A Jump off (in regular platforming section), make the shell jump (in shell-riding section)
Riding shell B Use speed boost (has a short cooldown)
Flailing on barrel A Abandon driftwood (jump off)
Riding plum A Abandon fruit (jump off)
Riding plum B Shoot, propelling yourself in the opposite direction
Riding rail-chair Analog ◁/▷ Rotate CCW/CW around the rail
Piloting skyboat Analog △/▽ Pitch ship down/up (i.e. Y-inverted steering)
