All of your data (authentication info, market data, orders, assets, etc.) is stored on your computer, I can't access it, so there's no privacy concerns there. That also means I can't help you if it gets deleted.

I use sentry.io to report on crashes/errors. Depending on what crash/error happened, things like a character ID or station ID might get recorded. On the desktop version, the folder name containing the app gets recorded. I promise to only use that data to fix broken shit, but if that worries you, figure out how to block requests to this host on your computer: o990106.ingest.sentry.io
