The project uses Cycles by default, as it's a raytraced renderer that gives beautiful lighting bounces. It's ideal for creating light references, but it can be slow to render especially if you have a middling GPU.
You can switch your renderer in the Gunquin Macro UI panel.
EEVEE is a real-time renderer, most of the materials work in either engine but there are some differences
The shadows are less accurate is the main thing, but it's more than enough for reference generally.
