Forget everything you know about how the baby horse gets its parents' stats.

So each horse has its own Health, Speed and Jump Strength. During the breeding the baby will take the Health of the father or the mother, will take the Speed of the father or the mother and will take the Jump Strength of the father or the mother.

Example, to have a horse that runs fast and jumps high, take your fastest horse and your highest jumping horse, breed them until the baby has the speed of the fastest and the jump height of the highest. Same thing for the Health.
