You should not need to change the countries table unless you need to add a new country or rename an old one. The nationality field is not needed (?). Only countries with the "include in selection" option checked will be included in the list of countries that can be selected for member nationality. (This means you don't need to scroll through a huge list, but can add needed countries to the list when required.)
