Ingredients:
- 4 Chicken Breasts halves, boneless and skinless
- 4 tsp Taco seasoning mix
- 1 cup Salsa
- 1 cup Shredded Cheddar cheese
- 2 T Sour Cream (optional)
Directions:
- Preheat oven to 400 degrees F.
- Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of the chicken breasts and pour salsa over all.
- Bake for 25-35 minutes or until chicken is tender and juicy and its juices run clear.
- Sprinkle chicken evenly with cheese and continue baking for an additional 3-5 minutes or until cheese is melted and bubbly.
- Top with sour cream and serve.
Notes:
I use this a lot for only a single serving with one chicken breast so you can just use enough taco seasoning mix to cover both sides while using only half a cup of salsa or whatever is enough to cover. I also like a ton of cheese so use your own discretion.
This also goes well over rice but works well on its own.
