Ingredients:

  • 4 Chicken Breasts halves, boneless and skinless
  • 4 tsp Taco seasoning mix
  • 1 cup Salsa
  • 1 cup Shredded Cheddar cheese
  • 2 T Sour Cream (optional)

Directions:

  1. Preheat oven to 400 degrees F.
  2. Place chicken breasts in a lightly greased 9x13 inch baking dish. Sprinkle taco seasoning on both sides of the chicken breasts and pour salsa over all.
  3. Bake for 25-35 minutes or until chicken is tender and juicy and its juices run clear.
  4. Sprinkle chicken evenly with cheese and continue baking for an additional 3-5 minutes or until cheese is melted and bubbly.
  5. Top with sour cream and serve.

Notes:

I use this a lot for only a single serving with one chicken breast so you can just use enough taco seasoning mix to cover both sides while using only half a cup of salsa or whatever is enough to cover. I also like a ton of cheese so use your own discretion.

This also goes well over rice but works well on its own.
