Ingredients:

  • 2-4 cups Ham, bite sized pieces
  • 1 pkg. Broccoli florets, small pkg.
  • 8 oz. Swiss cheese, shredded
  • 8 oz. Monterey pepper jack cheese, shredded
  • 4 large Eggs
  • 2 cups Heavy whipping cream
  • 1/2 tsp. Salt
  • 1 tsp. Sugar
  • 1/8 tsp. Ground red pepper (Cayenne)
  • 2 Pie shells, deep dish, frozen

Directions:

Preheat oven to 425.

Boil the broccoli in a pot with water and strain removing all liquid. Make sure the broccoli is in bite sized pieces. Place the broccoli in the two pie shells evenly. Evenly place the ham in the two pie shells evenly on top of the broccoli. Place the grated cheeses evenly on top of the broccoli and ham.

Beat the eggs slightly. Add the cream, salt, sugar and red pepper. Stir to mix. Distribute evenly over the two pie shells the mixture.

Line a large cookie sheet with tin foil and place the pie shells on it. Bake at 425 for 20 minutes. Turn the oven down to 325 and bake for an additional 30 minutes or until knife inserted in center comes out clean.
