Ingredients:
- 8 Hard boiled eggs, peeled and halved
- 1/4 cup Mayonnaise, or to taste
- 1/2 tsp. Yellow mustard (or dijon), or to taste
- 1/8 tsp. Paprika to garnish
Directions:
Cut peeled eggs in half lengthwise, Remove yolks with a spoon, set aside egg whites on a platter for later. Place yolks in a medium mixing bowl.
Mash yolks with a fork. Add mayo one tablespoon at a time and check for color, too much is overwhelming and stir. Add mustard one teaspoon at a time and taste. Add more mayo and mustard according to your taste preferences.
Spoon a heaping teaspoon of the egg mixture into each egg half. Garnish the top with a generous sprinkle of paprika.
