Ingredients:

  • 1 whole Chicken, whole
  • 1 Onion, chopped
  • 1 can Green Chilis, diced
  • 2 cups Tomato juice
  • 1 large can Tomato puree
  • 1/2 lb. Velveeta, cut in large chunks
  • 1 cup Whipping cream
  • 1 cup Chicken broth or stock
  • 1 dozen Corn Tortillas, quartered and fried

Directions:

Cook chicken and shred from bones. Combine first 8 ingredients. Cook until cheese melts. Layer sauce and tortillas in greased baking dish. Cook in 300 degree oven for one hour. Serve with sour cream.
