Beef and Artichoke Fettucine - MatthewFloyd/Cookbook GitHub Wiki

Ingredients:

  • 8 oz. Spinach fettuccine, uncooked
  • 1 jar Marinated artichoke hearts, quartered, 12 oz., reserve marinade
  • 1 Onion, finely chopped, (1/2 cup)
  • 2 cups Half-and-half
  • 1 cup Parmesan cheese, shredded
  • 2+ cups Round steak, cut up in bite size pieces

Directions:

Cook and drain fettuccine as directed on package.

In a large skillet over medium heat, cook steak in 1 tablespoon butter or olive oil until just done. Remove and keep warm.

In a skillet, heat reserved artichoke marinade to boiling over medium heat. Cook onion in marinade about 2 minutes, stirring occasionally. Stir in half-and-half; heat until hot. Stir in cheese, artichoke hearts and beef; heat until hot.

Add fettuccine; toss.

Notes:

Spinach fettuccine is hard to find so you can use plain fettuccine.
