Dyes
This is a guide to sources of dyes on the Yon Minecraft Realm. It's mostly written while I have colours and dyes in my head before I forget it.
Dyes in small amounts are useful for e.g. dying armour, text on signs, collars on tamed dogs and cats, beds, fireworks, banners, shulker boxes, etc. And candles in 1.17! In larger quantities they're useful for coloured glass, concrete, terracotta, and wool. For wool you're often better dyeing sheep the colour you want and then shearing them repeatedly - see below for a guide to already-dyed sheep flocks.
For getting dyes in quantity, for a big building project, you'll want a farm for the dye. Here are the main relevant farms for dyes:

Flowers grow when you bonemeal dirt or grass. In plains, each X/Z coordinate will grow either miscellaneous flowers (poppy, dandelion, azure bluet, cornflower) or tulips. In flower forests, each X/Z coordinate has one specific flower that will grow on that block (a colour gradient). In swamps, only blue orchids (light blue) grow. In all other biomes, only poppies and dandelions spawn.
Dyes
Most dye sources are crafted into dyes, apart from cactus and sea pickles which need to be smelted. Old school Minecrafters from before 1.14 may forget that ink sacs, bone meal, cocoa beans, and lapis lazuli are now distinct and need to be crafted to turn them in to their respective dyes.

Wool
If you want coloured wool in quantity, the traditional and often best way is to dye sheep and shear them repeatedly. Breeding coloured sheep produces a coloured sheep that's either one of the parent's colours or a combination of their colours. There are several flocks of coloured sheep. Note that some are dyed for different projects so their colours are not permanent:

There's also an automatic wool farm outside the Rainbow Castle where the sheep can be dyed appropriately.
