Horses are the primary means of transportation in the game.

Since you're experienced riders with Bareback Horse Riding, you don't need a saddle to ride (though it's more elegant with one). Of course, you need to ensure your animal’s cooperation by giving it apples beforehand and setting it as your mount by pressing shift+P (see Callable Horses).

Your horse can take a boat with you (HorseInBoat), and pull a cart from Astikor Carts Redux(Enter key in front of the cart while on horseback). You can call it with shift+H and check its stats with alt+K.
