Starting

When you start a new game you'll have 20 skulls and 3 shield. Shield is the blue skulls above your health. Shield is just permanent absorption, and can be increased permanently through using a Book of Absorption. Health may be permanently increased by using heart canisters.

Health Drops

Because Jetpack Cat Minecraft can be so unforgiving at time, mobs will drop large and small hearts when you kill them. Large hearts will randomly drop, and will heal you 10 hearts when used. Small hearts only drop from mobs when you kill them if you're at less than full health.

Shield

Shield starts to regen 6 seconds after you last took damage, even if you're not at full health or hunger. You can permanently increase your shield up to a max of 10 shield skulls using a book of absorption, which is made from a book & quill, and 2 golden apples

Heart Canisters

Heart canisters allow you to upgrade your health permanently. Each heart canister increases your max health by 1 heart. To make one, you need a canister and a heart. Hearts can only be found in mob death drops, and they only drop when you're at less than 100% health. If you pick them up when you're less than 100% health, they will heal you 1 heart and disappear. If you're at full health when you pick a small red heart up, it will go into your inventory where you can combine it on a crafting table with a canister.

To summarize: Kill mobs when you're at less than full health, but before you pick up any hearts from the ground, make sure to heal up to full health so the heart will go into your inventory.

Food and Health

You only need to have your hunger bar around 60% for healing to kick in. No longer do you have to be at full hunger to get natural healing, you're welcome.
