Ingredients

  • Eggs
  • 4 Tbsp Soy sauce
  • 4 Tbsp Mirin
  • 4 Tbsp Sake
  • 1 Tsp Sugar
  • Ice

Steps for the marinade

  1. Put marinade ingredients in a pan
  2. Bring the mixture to a boil
  3. Reduce heat to unknown amount, maybe medium. Simmer for 1 minute.
  4. Take mixture off heat and let it cool completely before putting eggs in.

Steps for the eggs

  1. Bring water to a violent boil.
  2. Lower eggs gently into boiling water. Lower the heat to a mild boil.
  3. Wait exactly 7 minutes. Set a timer.
  4. Prepare bowl of ice water.
  5. Gently remove eggs from boiling water and gently lower them into a bowl of ice water.
  6. Wait 15 minutes. Doesn't have to be exact, they just have to be completely chilled.
  7. Peel eggs. Dipping them in the water periodically will help.
  8. Put eggs in a ziploc with marinade.
  9. Remove all the air, and prop them up in a bowl so they're fully submerged.
  10. Refrigerate for 8 hours
  11. Warm up the eggs by putting the whole bag in warm water.

Notes

  • I know if I leave them in the marinade for too long they can get too salty but I don't know how long is too long.
