Ingredients
- Eggs
- 4 Tbsp Soy sauce
- 4 Tbsp Mirin
- 4 Tbsp Sake
- 1 Tsp Sugar
- Ice
Steps for the marinade
- Put marinade ingredients in a pan
- Bring the mixture to a boil
- Reduce heat to unknown amount, maybe medium. Simmer for 1 minute.
- Take mixture off heat and let it cool completely before putting eggs in.
Steps for the eggs
- Bring water to a violent boil.
- Lower eggs gently into boiling water. Lower the heat to a mild boil.
- Wait exactly 7 minutes. Set a timer.
- Prepare bowl of ice water.
- Gently remove eggs from boiling water and gently lower them into a bowl of ice water.
- Wait 15 minutes. Doesn't have to be exact, they just have to be completely chilled.
- Peel eggs. Dipping them in the water periodically will help.
- Put eggs in a ziploc with marinade.
- Remove all the air, and prop them up in a bowl so they're fully submerged.
- Refrigerate for 8 hours
- Warm up the eggs by putting the whole bag in warm water.
Notes
- I know if I leave them in the marinade for too long they can get too salty but I don't know how long is too long.
