Time: about 45 minutes

Ingredients

  • 1/2 cup red lentils
  • 1 cup finely chopped red onion
  • 2 diced roma tomatoes
  • 2 yukon gold potatoes, diced
  • 4 tablespoons olive oil, or other cooking oil
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • salt

Directions

  1. Chop and measure everything
  2. In a dry pan, on medium low heat, sautee the onions for 5 minutes
  3. Add the oil and cook for 2 minutes
  4. Reduce the heat to low, add berbere, and simmer for 5 minutes, stirring occasionally.
  5. Add the tomatoes and continue to simmer for 5 more minutes. If the mixture gets sticky add water
  6. Add 1/3 cup water and the lentils and increase the heat to medium heat. Cook for 2 minutes. Continue stirring occasionally.
  7. Add potatoes and cover with 1 1/2 cups of water. Cook for 10 minutes
  8. Add 1/2 cup water (if needed), garlic and ginger, and continue to cook for 8-10 minutes or until potatoes are done
  9. Add salt to taste
