Time: about 45 minutes
Ingredients
- 1/2 cup red lentils
- 1 cup finely chopped red onion
- 2 diced roma tomatoes
- 2 yukon gold potatoes, diced
- 4 tablespoons olive oil, or other cooking oil
- 1 tablespoon minced garlic
- 1 teaspoon minced ginger
- salt
Directions
- Chop and measure everything
- In a dry pan, on medium low heat, sautee the onions for 5 minutes
- Add the oil and cook for 2 minutes
- Reduce the heat to low, add berbere, and simmer for 5 minutes, stirring occasionally.
- Add the tomatoes and continue to simmer for 5 more minutes. If the mixture gets sticky add water
- Add 1/3 cup water and the lentils and increase the heat to medium heat. Cook for 2 minutes. Continue stirring occasionally.
- Add potatoes and cover with 1 1/2 cups of water. Cook for 10 minutes
- Add 1/2 cup water (if needed), garlic and ginger, and continue to cook for 8-10 minutes or until potatoes are done
- Add salt to taste
