Ingredients

  • 1/3 cup dried green lentils, rinsed
  • 1/4 cup diced tomatoes
  • 1 tablespoon finely chopped red onion
  • 1 tablespoon jalapeño, seeded, finely diced
  • 1/2 tablespoon olive oil
  • 1-2 tablespoon lemon juice
  • salt and pepper

Directions

  1. Chop and measure everything
  2. Add the lentil sand 2 cups of water to a sauce pan, and bring to a boil on medium heat, about 5 minutes
  3. Lower the heat to medium low and simmer for 15 minutes or until lentils are done. Strain the lentils and season with salt. Let cool down.
  4. While lentils are cooling, mix together olive oil, lemon juice, tomatoes, onions, and jalapeños
  5. Add salt and black pepper to taste

Notes: Can be made a day ahead of time and put in the fridge to let flavors absorb into the lentils.
Tried it with red jalapeño and it's better with green
