Ingredients
- 1/3 cup dried green lentils, rinsed
- 1/4 cup diced tomatoes
- 1 tablespoon finely chopped red onion
- 1 tablespoon jalapeño, seeded, finely diced
- 1/2 tablespoon olive oil
- 1-2 tablespoon lemon juice
- salt and pepper
Directions
- Chop and measure everything
- Add the lentil sand 2 cups of water to a sauce pan, and bring to a boil on medium heat, about 5 minutes
- Lower the heat to medium low and simmer for 15 minutes or until lentils are done. Strain the lentils and season with salt. Let cool down.
- While lentils are cooling, mix together olive oil, lemon juice, tomatoes, onions, and jalapeños
- Add salt and black pepper to taste
Notes:
Can be made a day ahead of time and put in the fridge to let flavors absorb into the lentils.
Tried it with red jalapeño and it's better with green
