By selecting the "Assets" add-on when building a new Demo configuration, your environment will be setup for fully fledged Assets demo, with sample sites and content (as you long as you previously downloaded the "Assets demo add-on" also).

Make sure you are downloading the latest Packages and Demo add-ons from the Add-ons / Assets menu.

The following properties are of specific interest:

demo.assets.smarttags.url	replacewithyourown	needs to point at the Smart Tag server VPN
demo.ffmpeg.transcoding	false	when set to true enables transcoding of videos via FFMPEG (CPU intensive), otherwise the transcoding workflow step is deleted
AdobeScene7.install	false	when set to true configures the Dynamic Media cloud service
AdobeScene7.registrationID	replaceWithYourOwnValue	registration ID for the Dynamic Media cloud service
AdobeScene7.videoService	replaceWithYourOwnValue	videoService URL for the Dynamic Media cloud service
